- 2 pounds (900 g) boneless and skinless chicken thighs
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon (15 ml) vegetable oil
- 1 cup (240 ml) apricot preserves
- 2 teaspoons grated ginger
- 2 cloves garlic, minced
- 1/4 cup (60 ml) soy sauce
- 1 tablespoon honey
- Sliced green onions for garnish
Instructions
- Pat the chicken thighs dry with paper towels, then season with garlic powder, smoked paprika, kosher salt, and black pepper.
- Heat vegetable oil in a large skillet over medium-high heat. Sear chicken thighs for 5-7 minutes per side until golden brown. Remove and set aside.
- Reduce heat to medium and add grated ginger and minced garlic. Stir for 30 seconds until fragrant.
- Pour in apricot preserves, soy sauce, and honey. Stir well and let simmer for 2-3 minutes until slightly thickened.
- Return the chicken to the skillet, coating each piece in the glaze. Cook for another 5-10 minutes until the internal temperature reaches 165°F (75°C).
- Transfer to a serving platter, drizzle with extra glaze, and garnish with sliced green onions.
- Serve with steamed rice or vegetables.
Notes
For extra flavor, add a pinch of red pepper flakes to the glaze. This dish pairs wonderfully with a side of roasted vegetables or a fresh salad.
