Ingredients
  

  • 3 tablespoons olive oil for sautéing the vegetables and adding richness
  • 1 large sweet Vidalia onion diced small
  • 1 large red bell pepper diced small
  • 14 ounce precooked sausage sliced into thin rounds, turkey kielbasa works beautifully
  • 3 to 5 cloves garlic finely minced or pressed
  • 2 to 3 teaspoons cumin
  • pinch cayenne pepper optional and to taste
  • 8 ounce precooked Spanish rice bag
  • 15 ounce black beans can, drained and rinsed
  • 1 cup corn frozen works perfectly
  • 1 cup low-sodium chicken broth
  • 2 to 3 green onions sliced into thin rounds
  • 2 tablespoons fresh cilantro minced; or to taste
  • 1/2 teaspoon kosher salt or to taste
  • 1/2 teaspoon freshly ground black pepper or to taste

Instructions
 

  • In a large skillet, heat 3 tablespoons of olive oil over medium heat until it shimmers.
  • Add the diced Vidalia onion and red bell pepper to the skillet. Sauté for about 3-4 minutes until softened and onion is translucent, stirring occasionally.
  • Add the sliced turkey kielbasa. Cook for 3-4 minutes until heated through and slightly browned.
  • Stir in the minced garlic, cumin, and cayenne pepper (if using). Cook for about 1 minute until fragrant, being careful not to burn the garlic.
  • Add the precooked Spanish rice and black beans. Pour in the chicken broth and stir to combine. Cook for 2-3 minutes until heated through.
  • Fold in the corn and season with salt and pepper to taste. Continue cooking for another minute to warm the corn.
  • Remove from heat and stir in sliced green onions and fresh cilantro. Adjust seasoning if needed.

Notes

  • Swap the sausage with chicken or beef sausage for a different flavor.
  • Add veggies like spinach, zucchini, or diced tomatoes for extra nutrition.
  • Make it spicier by adding jalapeños or hot sauce.
  • Go vegetarian by replacing sausage with extra beans and veggies.
