Ingredients
  

  • 1 lb beef sirloin cut into 2-inch strips
  • 2 Tbsp coconut oil or avocado oil
  • 2 large carrots chopped
  • 1 large crown broccoli chopped into florets
  • 1 yellow squash chopped
  • 1 zucchini squash chopped
  • 0.5 red bell pepper cored and cut into matchsticks
  • 0.5 red onion sliced
  • 1 batch easy stir fry sauce homemade or store-bought, ensure it’s Paleo-friendly

Instructions
 

  • Start by washing and chopping all your vegetables: carrots, broccoli, yellow squash, zucchini, red bell pepper, and red onion. Set aside in a bowl.
  • Heat 2 tablespoons of coconut oil or avocado oil in a large skillet or wok over medium-high heat until hot but not smoking.
  • Add beef sirloin strips in a single layer. Sear without stirring for 2-3 minutes, then flip and cook another 2-3 minutes until browned and cooked through. Remove beef and set aside.
  • In the same skillet, add chopped carrots and broccoli. Stir fry for 4-5 minutes until they begin to soften.
  • Add yellow squash, zucchini, red bell pepper, and red onion. Stir fry for an additional 3-4 minutes until vegetables are tender yet vibrant.
  • Return cooked beef to the skillet with vegetables. Pour in the easy stir fry sauce and toss until well combined. Cook for 1-2 minutes to heat through.
  • Remove from heat and serve immediately. Enjoy on its own or with cauliflower rice for a filling meal.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat gently with a splash of water to maintain moisture.
  • Try different cuts of beef like flank steak or ribeye for flavor variations.
