- 1 lb beef sirloin cut into 2-inch strips
- 2 Tbsp coconut oil or avocado oil
- 2 large carrots chopped
- 1 large crown broccoli chopped into florets
- 1 yellow squash chopped
- 1 zucchini squash chopped
- 0.5 red bell pepper cored and cut into matchsticks
- 0.5 red onion sliced
- 1 batch easy stir fry sauce homemade or store-bought, ensure it’s Paleo-friendly
Start by washing and chopping all your vegetables: carrots, broccoli, yellow squash, zucchini, red bell pepper, and red onion. Set aside in a bowl.
Heat 2 tablespoons of coconut oil or avocado oil in a large skillet or wok over medium-high heat until hot but not smoking.
Add beef sirloin strips in a single layer. Sear without stirring for 2-3 minutes, then flip and cook another 2-3 minutes until browned and cooked through. Remove beef and set aside.
In the same skillet, add chopped carrots and broccoli. Stir fry for 4-5 minutes until they begin to soften.
Add yellow squash, zucchini, red bell pepper, and red onion. Stir fry for an additional 3-4 minutes until vegetables are tender yet vibrant.
Return cooked beef to the skillet with vegetables. Pour in the easy stir fry sauce and toss until well combined. Cook for 1-2 minutes to heat through.
Remove from heat and serve immediately. Enjoy on its own or with cauliflower rice for a filling meal.
