Ingredients
  

Teriyaki Sauce

  • 0.5 cup low sodium soy sauce
  • 0.33 cup honey
  • 2 tablespoons fresh grated ginger
  • 2 cloves garlic minced or grated
  • 1 Fresno chile pepper seeded and diced

Main Ingredients

  • 0.25 cup sesame oil
  • 1 pound chicken breast or thighs
  • 0.5 pineapple cut into half moons
  • 2 bunches broccoli or broccolini cut into florets
  • 2 tablespoons sesame seeds for garnish
  • Kosher salt and pepper to taste
  • Lime wedges, cilantro, and rice for serving

Instructions
 

Preparation

  • In a bowl, whisk together the low sodium soy sauce, honey, grated ginger, minced garlic, and diced Fresno chile pepper to make the teriyaki sauce.

Cooking

  • Heat the sesame oil in a large skillet over medium-high heat. Add the chicken and season with kosher salt and pepper. Cook for about 5-7 minutes, until browned and cooked through. Remove chicken and set aside.
  • In the same skillet, add the broccoli florets and sauté for 3-4 minutes until bright green and tender-crisp.
  • Return the chicken to the skillet and add the pineapple half moons. Pour the teriyaki sauce over the chicken and broccoli, stirring to coat evenly. Cook for another 2-3 minutes to thicken the sauce slightly.

Serving

  • Remove from heat. Serve the teriyaki chicken and broccoli over cooked rice, garnished with sesame seeds, lime wedges, and fresh cilantro.

Notes

  • Leftovers can be refrigerated for up to 3 days and reheated gently with added moisture to keep tender.
  • Freeze in a freezer-safe container for up to 2 months; thaw overnight before reheating.
