Instructions
 

  • In your microwave-safe mug, mash the medium overly ripe banana with a fork until smooth, about 1/3 cup mashed banana.
  • Add melted coconut oil (or butter), honey (or maple syrup), egg, and vanilla extract to the mashed banana. Mix well until combined.
  • Sprinkle in whole wheat pastry flour (or all-purpose flour), baking soda, ground cinnamon, and kosher salt. Stir until just combined, careful not to overmix.
  • Fold in semi-sweet or dark chocolate chunks, ensuring even distribution throughout the batter.
  • Microwave the mug on high for 1 minute and 30 seconds. Adjust time slightly depending on your microwave wattage. The cake should rise and be set in the center.
