Parchment Paper
- 1 cup peanut butter natural, creamy, or crunchy
- 1/4 cup coconut oil melted
- 2 tablespoons honey
- 1/4 teaspoon sea salt
- 1/4 cup confectioners' sugar optional
- 1/2 teaspoon vanilla
Line an 8-inch square pan with parchment paper, leaving some overhang to make it easier to lift out the fudge later.
In a microwave-safe bowl, melt the coconut oil for about 20-30 seconds. Alternatively, melt butter if using.
In a mixing bowl, combine the peanut butter, melted coconut oil, honey, sea salt, and vanilla. Add confectioners' sugar if using. Mix until smooth and well combined.
Transfer the peanut butter mixture into the prepared pan. Use a spatula to spread evenly and smooth the top.
Refrigerate the fudge for at least 30 minutes, or until set.
Lift the fudge out of the pan using the parchment overhang. Cut into squares and enjoy!
