Ingredients
  

  • 1 cup peanut butter natural, creamy, or crunchy
  • 1/4 cup coconut oil melted
  • 2 tablespoons honey
  • 1/4 teaspoon sea salt
  • 1/4 cup confectioners' sugar optional
  • 1/2 teaspoon vanilla

Instructions
 

  • Line an 8-inch square pan with parchment paper, leaving some overhang to make it easier to lift out the fudge later.
  • In a microwave-safe bowl, melt the coconut oil for about 20-30 seconds. Alternatively, melt butter if using.
  • In a mixing bowl, combine the peanut butter, melted coconut oil, honey, sea salt, and vanilla. Add confectioners' sugar if using. Mix until smooth and well combined.
  • Transfer the peanut butter mixture into the prepared pan. Use a spatula to spread evenly and smooth the top.
  • Refrigerate the fudge for at least 30 minutes, or until set.
  • Lift the fudge out of the pan using the parchment overhang. Cut into squares and enjoy!
