Ingredients
  

Brownie Batter

  • 1 cup butter
  • 6 ounces unsweetened chocolate
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 4 eggs
  • 1 1/4 cups flour

Mint Layer

  • 3/4 cup butter softened
  • 3 ounces cream cheese softened
  • 2 teaspoons mint extract
  • 5 drops green food coloring optional
  • 3 cups powdered sugar

Chocolate Ganache

  • 1/2 cup butter
  • 2 cups semi-sweet chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and grease your 9x13 inch baking pan or line it with parchment paper for easy removal.

Brownie Batter

  • In a double boiler or microwave, melt the 1 cup of butter and the 6 ounces of unsweetened chocolate together. Stir until smooth and let it cool slightly.
  • In a large mixing bowl, whisk together the melted chocolate mixture, 2 cups of sugar, 1 teaspoon of vanilla, and 1 teaspoon of salt. Add in the 4 eggs, one at a time, mixing well after each addition. Gradually fold in the 1 1/4 cups of flour until just combined.
  • Pour the brownie batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Mint Layer

  • While the brownies are baking, cream together the 3/4 cup softened butter, 3 ounces of softened cream cheese, 2 teaspoons of mint extract, and 5 drops of green food coloring in a mixing bowl. Gradually add in the 3 cups of powdered sugar until the mixture is smooth and creamy.

Assembling

  • Once the brownies are done baking, allow them to cool in the pan for about 10 minutes before spreading the mint layer evenly over the top. Allow the brownies to cool completely before adding the chocolate ganache.

Chocolate Ganache

  • In a microwave-safe bowl, combine the 1/2 cup of butter and 2 cups of semi-sweet chocolate chips. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth. Pour the ganache over the mint layer and spread evenly.

Finishing

  • Refrigerate the brownies for at least 1 hour to set the ganache before slicing into squares. Serve chilled or at room temperature for a delightful treat.

Notes

  • Use high-quality unsweetened chocolate and semi-sweet chocolate chips for the best flavor.
  • For a thinner mint layer, add a splash of milk or more softened butter to adjust consistency.
  • Store brownies in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months before adding ganache.
