Brownie Batter
- 1 cup butter
- 6 ounces unsweetened chocolate
- 2 cups sugar
- 1 teaspoon vanilla
- 1 teaspoon salt
- 4 eggs
- 1 1/4 cups flour
Mint Layer
- 3/4 cup butter softened
- 3 ounces cream cheese softened
- 2 teaspoons mint extract
- 5 drops green food coloring optional
- 3 cups powdered sugar
Chocolate Ganache
- 1/2 cup butter
- 2 cups semi-sweet chocolate chips
Brownie Batter
In a double boiler or microwave, melt the 1 cup of butter and the 6 ounces of unsweetened chocolate together. Stir until smooth and let it cool slightly.
In a large mixing bowl, whisk together the melted chocolate mixture, 2 cups of sugar, 1 teaspoon of vanilla, and 1 teaspoon of salt. Add in the 4 eggs, one at a time, mixing well after each addition. Gradually fold in the 1 1/4 cups of flour until just combined.
Pour the brownie batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Mint Layer
While the brownies are baking, cream together the 3/4 cup softened butter, 3 ounces of softened cream cheese, 2 teaspoons of mint extract, and 5 drops of green food coloring in a mixing bowl. Gradually add in the 3 cups of powdered sugar until the mixture is smooth and creamy.
Chocolate Ganache
In a microwave-safe bowl, combine the 1/2 cup of butter and 2 cups of semi-sweet chocolate chips. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth. Pour the ganache over the mint layer and spread evenly.
