Air-Fryer Chicken Bites

Tender, seasoned chicken bites cooked quickly in the air fryer for a juicy, crispy result.

Ingredients
  

  • 3 pounds boneless skinless chicken breasts cut into 1-inch cubes
  • 1/4 cup low-fat Italian dressing
  • 1 tablespoon adobo seasoning
  • 1 tablespoon dried Italian herbs
  • 1 teaspoon kosher salt
  • 1/2 tablespoon taco seasoning optional, for added flavor
  • nonstick cooking spray for air fryer basket

Instructions
 

  • Place the 1-inch cubed chicken into a mixing bowl.
  • Add the low-fat Italian dressing, adobo seasoning, dried Italian herbs, kosher salt, and the optional taco seasoning to the bowl.
  • Toss the chicken and seasonings until evenly coated, then cover and marinate in the refrigerator for at least 15 minutes or up to 1 hour.
  • Preheat the air fryer to 400°F (200°C) and lightly spray the air fryer basket with nonstick cooking spray.
  • Arrange the marinated chicken bites in a single layer in the basket, working in batches if needed so pieces are not overcrowded.
  • Air fry the chicken bites for about 12 minutes, turning once halfway through, until browned and cooked through (internal temperature 165°F / 74°C).
  • Remove the chicken from the air fryer and let rest for a couple of minutes before serving.

Notes

  • Marinating longer (up to 1 hour) increases flavor.
  • Cook in batches to avoid overcrowding the air fryer.
  • Check doneness with a meat thermometer for accuracy.
