Place the 1-inch cubed chicken into a mixing bowl.
Add the low-fat Italian dressing, adobo seasoning, dried Italian herbs, kosher salt, and the optional taco seasoning to the bowl.
Toss the chicken and seasonings until evenly coated, then cover and marinate in the refrigerator for at least 15 minutes or up to 1 hour.
Preheat the air fryer to 400°F (200°C) and lightly spray the air fryer basket with nonstick cooking spray.
Arrange the marinated chicken bites in a single layer in the basket, working in batches if needed so pieces are not overcrowded.
Air fry the chicken bites for about 12 minutes, turning once halfway through, until browned and cooked through (internal temperature 165°F / 74°C).
Remove the chicken from the air fryer and let rest for a couple of minutes before serving.
