Ingredients
  

  • 2 Russet potatoes unpeeled, scrubbed, and rinsed (about 2 ½ lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup finely shredded parmesan cheese divided, plus more for serving

Instructions
 

  • Start by washing your Russet potatoes under running water to remove any dirt. Leave the skins on for added texture and nutrients. Cut each potato in half lengthwise, then slice each half into wedges. Aim for uniform thickness to ensure even cooking.
  • In a mixing bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper. Add the potato wedges to the bowl and toss until they are evenly coated with the oil and spices.
  • Sprinkle half of the finely shredded parmesan cheese over the seasoned wedges. Toss again to distribute the cheese evenly among the potato wedges.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes. Preheating will help create that crispiness we all love!
  • Place the seasoned potato wedges in the air fryer basket in a single layer. You may need to work in batches depending on the size of your air fryer. Cook the wedges for 15-20 minutes, shaking the basket halfway through to promote even cooking. Keep an eye on them, as cooking times can vary based on the thickness of your wedges.
  • Once the potato wedges are golden brown and crispy, remove them from the air fryer. Sprinkle the remaining parmesan cheese on top and serve immediately. These wedges are best enjoyed hot, so dig in while they’re fresh out of the fryer!

Notes

  • For a different flavor, substitute Russet potatoes with Yukon Gold or sweet potatoes.
  • Try using avocado oil or canola oil instead of olive oil for a variation.
  • Store leftover wedges in an airtight container in the fridge for up to 3 days and reheat in the air fryer for 5-7 minutes to crisp.
