Equipment

  • Air Fryer
  • Mixing Bowl
  • Spatula
  • Measuring cups and spoons

Ingredients

  • 2 large eggs binding agent
  • 1/4 cup red onion chopped
  • 1/4 cup dill chopped
  • 2 tablespoons mayo e.g. Sir Kensington
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 12 ounces cooked or canned wild salmon flaked (from 1 lb salmon or 2 6-ounce cans)
  • 1/2 cup panko plain or gluten-free panko (or matzo for Passover)
  • olive oil spray for light coating
  • lemon wedges for serving

Instructions

Build Air Fryer Salmon Patties Step by Step

  • If you’re using fresh salmon, cook it thoroughly (grilling or baking works well) and then flake it into a bowl. If you’re using canned salmon, make sure to drain it well and flake it as well.
  • In a mixing bowl, combine the flaked salmon, chopped red onion, chopped dill, mayo, Dijon mustard, Old Bay seasoning, and eggs. Stir until everything is well incorporated.
  • Gently fold in the panko until the mixture holds together well. The panko will provide the necessary texture and crunch.
  • Using your hands, shape the mixture into patties about 2-3 inches in diameter, ensuring they are not too thick for even cooking.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes to achieve a crispy exterior.
  • Spray the air fryer basket with olive oil spray. Place the patties in a single layer without touching. Lightly spray the tops with olive oil. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  • Remove the patties from the air fryer and let them cool for a minute. Serve with lemon wedges and enjoy!

Notes

  • Drain canned salmon thoroughly to prevent overly wet patties.
  • Do not make patties too thick to ensure even cooking.
  • Preheat the air fryer for best crispy results.
  • Do not overcrowd the air fryer basket to allow proper browning.
  • Leftover patties can be refrigerated for up to 3 days or frozen for 2 months.
