Instructions
Step 1: Preheat your oven to 350°F (175°C).
Step 2: In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
Step 3: Add the vanilla extract and almond extract, mixing until well combined.
Step 4: In another bowl, whisk together the almond flour and all-purpose flour. If using, mix in the finely chopped almonds.
Step 5: Gradually add the flour mixture to the butter mixture, mixing on low speed until a dough forms.
Step 6: Take a small amount of dough, roll it into a ball, and shape it into a crescent. Place on a baking sheet lined with parchment paper.
Step 7: Bake for about 15-20 minutes or until lightly golden on the bottoms.
Step 8: Once cooled, roll the cookies in powdered sugar for a snowy finish.
Notes
Make sure your butter is at room temperature for easy mixing. For a stronger almond flavor, increase the almond extract slightly.
