Almond Granola Bars

- 1 cup Quick Cooking Oats
- 1 cup Roasted Unsalted Almonds chopped if desired
- 1 cup Rice Krispie Cereal
- 1 cup Oat Flour
- 1 teaspoon Salt
- 1 teaspoon Cinnamon optional
- 1 cup Creamy Almond Butter
- 1/2 cup Honey
- 2 teaspoons Vanilla Extract
Preheat your oven to 350°F (175°C).
Line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides.
In a large mixing bowl, combine the quick-cooking oats, roasted unsalted almonds, rice Krispie cereal, oat flour, salt, and cinnamon (if using). Stir until well mixed.
In a separate bowl, mix together the creamy almond butter, honey, and vanilla extract until smooth and well combined.
Pour the wet mixture into the bowl with the dry ingredients. Use a spatula to fold everything together until the dry ingredients are fully coated and a sticky mixture forms.
Transfer the granola mixture into the prepared baking pan. Press it down firmly and evenly using a spatula.
Bake for about 20-25 minutes, or until the edges are golden brown.
Remove the pan from the oven and let cool completely. Use the parchment paper to lift the bars out, then cut into squares or rectangles.
- Press the mixture firmly into the pan to help the bars hold together well.
- Substitute honey with maple syrup or agave nectar for a vegan version.
- Store bars in an airtight container at room temperature for up to one week, or freeze for up to three months.
