Equipment

  • Mixing Bowl
  • Spatula
  • Baking Pan
  • Parchment Paper
  • Measuring cups and spoons

Ingredients

  • 1 cup Quick Cooking Oats
  • 1 cup Roasted Unsalted Almonds chopped if desired
  • 1 cup Rice Krispie Cereal
  • 1 cup Oat Flour
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon optional
  • 1 cup Creamy Almond Butter
  • 1/2 cup Honey
  • 2 teaspoons Vanilla Extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • Line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides.
  • In a large mixing bowl, combine the quick-cooking oats, roasted unsalted almonds, rice Krispie cereal, oat flour, salt, and cinnamon (if using). Stir until well mixed.
  • In a separate bowl, mix together the creamy almond butter, honey, and vanilla extract until smooth and well combined.
  • Pour the wet mixture into the bowl with the dry ingredients. Use a spatula to fold everything together until the dry ingredients are fully coated and a sticky mixture forms.
  • Transfer the granola mixture into the prepared baking pan. Press it down firmly and evenly using a spatula.
  • Bake for about 20-25 minutes, or until the edges are golden brown.
  • Remove the pan from the oven and let cool completely. Use the parchment paper to lift the bars out, then cut into squares or rectangles.

Notes

  • Press the mixture firmly into the pan to help the bars hold together well.
  • Substitute honey with maple syrup or agave nectar for a vegan version.
  • Store bars in an airtight container at room temperature for up to one week, or freeze for up to three months.
