Ingredients
  

  • 6 chicken thighs or 4 large chicken breast fillets bone-in or boneless, skin-on or skinless
  • 1 pinch salt
  • 1 pinch pepper
  • 6 tablespoons butter divided for browning and sauce making
  • 1/4 cup honey adds a natural sweetness that caramelizes beautifully
  • 1 tablespoon garlic, minced or 4 cloves
  • 2 tablespoons lemon juice freshly squeezed; juice of half a lemon works too
  • 2-4 tablespoons chicken broth optional, for extra moisture and flavor
  • 3 cups broccoli florets optional, can be raw or steamed
  • 2 tablespoons fresh parsley, chopped for garnish and freshness

Instructions
 

  • Start by seasoning your chicken thighs or breasts with a pinch of salt and pepper on both sides. If you’re using chicken breasts, pound them thin to ensure even cooking.
  • In a large skillet, melt 3 tablespoons of butter over medium heat. Allow it to cook until it turns golden brown and starts to have a nutty aroma. Be cautious not to burn it!
  • Add the seasoned chicken to the skillet and sear for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden color. Remove the chicken from the skillet and set aside.
  • In the same skillet, lower the heat and add the minced garlic. Sauté for about 30 seconds until fragrant. Then add the honey and lemon juice, stirring to combine.
  • Return the chicken to the skillet, coating it thoroughly in the honey garlic sauce. If you prefer a saucier dish, add 2-4 tablespoons of chicken broth at this stage.
  • If you’re including broccoli, add it to the skillet now. Stir to combine and cook for an additional 2-3 minutes, allowing the broccoli to steam slightly in the sauce.
  • Plate the chicken and drizzle with any remaining sauce from the skillet. Garnish with fresh parsley and serve with lemon wedges for a squeeze of brightness.

  • Don’t rush the browning process; it adds depth and a nutty flavor to the dish.
  • Use a meat thermometer to avoid overcooking and keep the chicken juicy.
  • For a vegan version, substitute chicken with tofu or tempeh and use vegan butter and vegetable broth.
