- 6 anchovies anchovies in oil
- 2 egg yolks egg yolks
- 3 cloves garlic fresh
- 1/4 cup lemon juice freshly squeezed
- 2 teaspoons Dijon mustard
- 3/4 cup olive oil extra virgin
- 1/2 cup grated Parmesan cheese
Start by finely chopping the anchovies or mashing them with a fork until they form a paste.
In a mixing bowl, combine the 2 egg yolks with the minced garlic. Whisk together until well blended.
Pour in 1/4 cup of lemon juice and 2 teaspoons of Dijon mustard. Continue whisking until the mixture is smooth and homogeneous.
Add the anchovy paste to the egg mixture and whisk until fully incorporated.
While continuously whisking, slowly drizzle in the 3/4 cup of olive oil to emulsify the dressing.
Once emulsified, add 1/2 cup of grated Parmesan cheese and whisk to combine all ingredients.
- For a vegan version, omit egg yolks and replace Parmesan cheese with nutritional yeast.
- If the dressing is too thick, whisk in a teaspoon of water or extra lemon juice to adjust consistency.
- Store the dressing in an airtight container in the refrigerator and use within one week.
