Ingredients
  

  • 4 slices whole grain bread
  • 1 ripe avocado
  • 1 small onion finely chopped
  • 1 small tomato diced
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin powder
  • salt to taste
  • 1/2 cup cooked chicken shredded or sliced (optional)
  • turkey bacon cooked and crumbled (optional)

Instructions
 

Prepare the Avocado Chutney

  • Cut the ripe avocado in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocado with a fork until desired consistency.
  • Add finely chopped onion, diced tomato, and chopped cilantro to the bowl.
  • Sprinkle in cumin powder and salt to taste.
  • Squeeze in lime juice and mix everything until well combined.

Toast the Bread

  • Toast whole grain bread slices lightly until golden and slightly crispy.

Add Protein (Optional)

  • Layer cooked chicken or turkey bacon on two of the toasted bread slices on top of the chutney spread.

Assemble the Sandwiches

  • Spread a generous amount of avocado chutney on each slice of bread.
  • For slices with protein, spread chutney first, then add chicken or turkey bacon.
  • Place the chutney-only slices on top to complete each sandwich.

Serve and Enjoy

  • Cut sandwiches diagonally or into halves and serve immediately.
  • Pair with a light salad or crunchy veggie sticks for a wholesome meal.
