Ingredients
  

  • 1 medium avocado ripe
  • 4 slices bread your choice: sourdough, whole wheat, or white
  • 2-3 slices Monterey Jack cheese
  • 2-3 slices cheddar cheese
  • 2 tablespoons butter softened
  • salt to taste
  • black pepper to taste

Instructions
 

  • Start by cutting the ripe avocado in half. Remove the pit and scoop the flesh into a bowl. Mash it with a fork until it reaches your desired level of creaminess. Season with a pinch of salt and black pepper to enhance the flavor.
  • Take two slices of bread and spread a generous amount of the mashed avocado on one side of each slice. On top of the avocado, layer 1-2 slices of Monterey Jack cheese and 1-2 slices of cheddar cheese. Place the remaining slices of bread on top, avocado side down.
  • Spread the softened butter on the outside of each slice of bread. This will help create a beautifully crispy and golden crust.
  • Place your non-stick skillet over medium heat. Allow it to warm up for a minute or two.
  • Once the skillet is hot, carefully place your assembled sandwich in the pan. Cook for about 3-4 minutes on one side, or until golden brown.
  • Using your spatula, gently flip the sandwich to the other side. Cook for another 3-4 minutes until the cheese is melted and the bread is crispy.
  • Once both sides are perfectly toasted and the cheese is gooey, remove the sandwich from the skillet. Let it sit for a minute before slicing in half. Serve warm and enjoy the delightful combination of flavors.
