  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • Salt to taste

Instructions
 

  • Begin by toasting your two slices of whole grain bread until they are golden and crisp. Use a toaster or a pan over medium heat.
  • While the bread is toasting, cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork to your desired texture. Season with salt and pepper.
  • Heat a drizzle of olive oil in a non-stick skillet over medium heat. Crack the eggs into the pan carefully. Cook for 3-4 minutes until the whites are set but yolks remain runny. For firmer yolks, flip and cook an additional minute. Season with salt and pepper.
  • Spread a generous layer of mashed avocado over each slice of toasted whole grain bread. Place one fried egg on top of each slice. Optionally, sprinkle red pepper flakes for a subtle heat.
  • Serve immediately to enjoy the contrast of warm egg and toast with cool, creamy avocado. Perfect alone or with a fresh salad or roasted tomatoes.
