Equipment

  • Mixing Bowl
  • Measuring Spoons
  • Baking Sheet
  • Parchment Paper
  • Meat Thermometer

Ingredients

For the Blackened Chicken Thighs

  • 2 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper freshly ground
  • 0.5 tsp sea salt to taste
  • 1.5 to 2 pounds bone-in chicken thighs about 4 thighs
  • 2 Tbsp avocado oil

Instructions

Make Baked Blackened Chicken Thighs: A Simple Method

  • Preheat your oven to 425°F (220°C). This high temperature will help create that beautiful blackened crust.
  • In a mixing bowl, combine the smoked paprika, cayenne pepper, dried thyme, dried oregano, garlic powder, onion powder, black pepper, and sea salt. Mix well to create a uniform spice blend.
  • Pat the chicken thighs dry with paper towels. Drizzle the avocado oil over the thighs and rub it in to coat them evenly. Then, sprinkle the spice mix generously on both sides of each thigh, pressing it into the meat for maximum flavor.
  • Line a baking sheet with parchment paper for easy cleanup (if desired). Place the seasoned chicken thighs skin-side up on the sheet, making sure they are spaced out to allow for even cooking.
  • Bake the chicken in the preheated oven for about 35-40 minutes, or until the skin is crispy and a meat thermometer inserted into the thickest part reads 165°F (75°C).
  • Once baked, remove the chicken from the oven and let it rest for 5-10 minutes. This allows the juices to redistribute, ensuring every bite is succulent. Serve the chicken thighs with your favorite sides, and enjoy!

Notes

  • You can marinate the chicken with the spice mix and oil up to 24 hours ahead for deeper flavor.
  • Store cooked chicken thighs in the fridge for up to 3 days and reheat in the oven to maintain crispiness.
  • Boneless chicken thighs can be used; reduce baking time to 25-30 minutes accordingly.
