Equipment

  • 9x13 inch Baking Dish
  • Skillet
  • Large Mixing Bowl
  • Whisk

Ingredients

  • 1 loaf challah or brioche bread cut into cubes
  • 6 large eggs
  • 2 cups milk whole milk recommended for creaminess
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup turkey bacon cooked and crumbled
  • cooking spray or butter for greasing the baking dish

Instructions

  • Cut your challah or brioche loaf into 1 to 1.5-inch cubes. Spread the cubes evenly in a greased 9x13-inch baking dish.
  • Cook the turkey bacon until crisp in a skillet over medium heat or in the oven. Crumble into small pieces and set aside.
  • In a large mixing bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, and nutmeg until well combined and smooth.
  • Pour the custard evenly over the bread cubes in the baking dish. Gently press the bread down to soak up the liquid. Sprinkle the crumbled turkey bacon evenly on top, pressing it gently into the mixture.
  • Cover the casserole with plastic wrap and refrigerate overnight or at least 4 hours for best results.
  • Preheat the oven to 350°F (175°C). Remove the plastic wrap and bake uncovered for 45 to 55 minutes, until the top is golden brown and the custard is set.
  • Allow the casserole to cool for about 10 minutes before serving. Serve warm with maple syrup, fresh berries, or powdered sugar.

Notes

  • Use slightly stale challah or brioche bread to avoid sogginess and achieve the ideal custardy texture.
  • Refrigerate the casserole overnight to allow the bread to fully absorb the custard for a creamy consistency.
  • Omit turkey bacon or substitute with mushrooms or nuts for a vegetarian version.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
  • Try adding sliced fruit or different spices like cardamom or pumpkin pie spice for variations.
