Ingredients
  

  • 2 cups rolled oats old-fashioned rolled oats for the best texture
  • 1 1/3 cup mashed banana acts as a natural sweetener and binder
  • 6 tbsp water helps to hydrate the oats and create a fluffy texture
  • 1/2 tsp salt balances the sweetness and enhances flavor
  • 3 tbsp pure maple syrup, agave, or honey choose your preferred sweetener
  • 3 tbsp oil, nut butter, or additional water adds richness and moisture
  • 1 tsp pure vanilla extract enhances overall flavor
  • optional mix-ins chocolate chips, chopped nuts, or dried fruits

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease your baking dish lightly with oil or line it with parchment paper to prevent sticking.
  • In a large mixing bowl, use a fork or potato masher to mash the bananas until smooth and creamy.
  • Add the rolled oats, water, salt, maple syrup (or alternative sweetener), oil (or nut butter), and vanilla extract to the mashed bananas and stir until well combined.
  • If using optional mix-ins like chocolate chips or nuts, fold them into the mixture now.
  • Pour the oatmeal mixture into the prepared baking dish and spread evenly with a spatula.
  • Bake for about 25-30 minutes until edges are golden and center is set.
  • Remove from oven and let cool for about 10 minutes. Slice into bars and enjoy warm or at room temperature.

Notes

  • Prepare the mixture the night before and refrigerate to save time in the morning.
  • Store baked bars in an airtight container in the refrigerator for up to one week.
  • Freeze individual bars wrapped in plastic wrap for longer storage and thaw before eating.
