Instructions
Step 1: Prepare the Salmon. Start by patting your salmon fillets dry with paper towels. Cut the salmon into 1-inch cubes.
Step 2: Whisk the Marinade. In a mixing bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, salt, black pepper, smoked paprika, and oregano. Use a whisk to mix everything together until well combined.
Step 3: Marinate the Salmon. Place the salmon cubes in a zip-top bag or a shallow dish. Pour the marinade over the salmon, making sure each piece is well coated. Seal the bag or cover the dish and let the salmon marinate in the fridge for at least 30 minutes.
Step 4: Prepare the Skewers. If you are using wooden skewers, make sure they have been soaking in water. Thread the marinated salmon pieces onto the skewers, leaving a little space between each piece.
Step 5: Preheat the Oven or Grill. If you’re baking, preheat your oven to 400°F (200°C). For grilling, preheat your grill to medium-high heat.
Step 6: Bake or Grill the Kabobs. If baking, line a baking sheet with parchment paper. Place the skewers on the baking sheet and bake for 12 to 15 minutes, or until the salmon is cooked through. If grilling, place the skewers directly on the grill and cook for about 4 to 5 minutes on each side.
Step 7: Serve and Enjoy. Once cooked, carefully remove the kabobs from the oven or grill. Let them sit for a couple of minutes, then serve them with lemon wedges.
