Ingredients
  

  • 1 cup all-purpose flour spooned into measuring cup and leveled-off
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1 cup mashed very ripe bananas from 2 to 3 large bananas
  • 2 tablespoons fresh lemon juice from 1 lemon
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures that the banana bread bakes evenly.
  • Grease your loaf pan with butter or line it with parchment paper for easy removal after baking.
  • In a mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until well combined. Set aside.
  • In another bowl, cream together the softened butter and sugar until light and fluffy. This should take about 2-3 minutes using a hand mixer or a stand mixer.
  • Add the eggs one at a time to the butter and sugar mixture, mixing well after each addition. Then, stir in the mashed bananas, fresh lemon juice, and vanilla extract until fully incorporated.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix; a few lumps are perfectly fine.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Notes

  • Try adding ½ cup of chopped nuts or chocolate chips for extra texture and flavor.
  • Substitute half the flour with whole wheat for a healthier bread.
  • Store leftover banana bread in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
