  • 32 ounces cream cheese Use good quality for best flavor.
  • 1 cup superfine sugar Also known as caster sugar in the UK.
  • 6 large eggs
  • ¼ cup all-purpose flour
  • 1 cup heavy whipping cream
  • ¼ teaspoon salt

Instructions
 

  • Step 1: Preheat your oven to 400°F (200°C) and line a 9-inch round springform pan with parchment paper.
  • Step 2: In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the superfine sugar and mix until well combined.
  • Step 3: Add the eggs one at a time, mixing well after each addition to ensure a smooth texture.
  • Step 4: Sift in the flour and salt, then gently fold in. Slowly drizzle in the heavy cream while mixing until smooth.
  • Step 5: Pour the batter into the prepared pan and bake for 50-60 minutes, until the top is golden-brown and the center is slightly wobbly.
  • Step 6: Allow the cheesecake to cool in the pan for an hour, then refrigerate for at least 4 hours before serving.

Notes

Use room temperature cream cheese for a smoother batter. Don’t overmix after adding eggs to avoid cracking.
