Step 1: Prepare the Sweet Potatoes

  • Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean under running water and pat them dry. Using a fork, poke a few holes all around each sweet potato to allow steam to escape during baking.
  • Place the sweet potatoes directly on the oven rack or a baking sheet lined with foil for easier cleanup. Bake for about 45-60 minutes, or until a knife easily pierces through the center.

Step 2: Cook and Shred the Chicken

  • While the sweet potatoes bake, cook the chicken breast by boiling, grilling, or baking it according to your preference. Once cooked, shred the chicken using two forks or your hands.
  • Toss the shredded chicken with garlic powder, onion powder, salt, and pepper for added flavor.

Step 3: Mix Chicken with Barbecue Sauce

  • In a bowl, combine the shredded chicken with 1 cup of barbecue sauce. Mix well until every piece is coated.

Step 4: Assemble the Stuffed Sweet Potatoes

  • Once the sweet potatoes are done baking, remove them from the oven and let them cool slightly. Slice each sweet potato lengthwise down the center, being careful not to cut all the way through.
  • Gently fluff the insides with a fork to create space for the filling. Spoon the bbq chicken mixture generously into each sweet potato, dividing it evenly. Sprinkle shredded cheddar cheese over the top.

Step 5: Final Bake to Melt Cheese
