Ingredients
  

  • 1 pound flank steak cut into thin strips
  • 0.5 teaspoon ground white pepper
  • 0.33 cup low sodium soy sauce or gluten-free tamari
  • 0.33 cup water
  • 1 tablespoon brown sugar
  • 5 cloves garlic minced
  • 1 piece fresh ginger one-inch piece, peeled and grated
  • 1 tablespoon cornstarch optional
  • 1 tablespoon sesame oil
  • 0.5 yellow onion sliced
  • 1 large head broccoli cut into florets and blanched
  • cauliflower rice or white rice optional for serving
  • 1 tablespoon toasted sesame seeds
  • 3 scallions sliced on the bias

Instructions
 

Prepare the Marinade

  • In a mixing bowl, combine the low sodium soy sauce, water, brown sugar, minced garlic, grated ginger, and ground white pepper. Stir well to dissolve the sugar. If you prefer a thicker sauce, whisk in the cornstarch until smooth.
  • This marinade will infuse the beef with flavor and tenderize it.

Marinate the Beef

  • Add the thin strips of flank steak to the marinade, making sure each piece is well-coated. Allow it to marinate for at least 15 minutes. For more flavor, marinate up to an hour in the refrigerator.

Blanch the Broccoli

  • Bring a pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and set aside.

Sauté the Onion

  • In a large skillet or wok, heat the sesame oil over medium-high heat. Add the sliced yellow onion and sauté for 2-3 minutes until translucent and fragrant.

Cook the Beef

  • Increase heat to high and add the marinated beef to the skillet. Stir-fry for 3-5 minutes until browned and cooked through, stirring frequently for even cooking.

Add Broccoli and Finish

  • Add the blanched broccoli to the skillet. Pour the remaining marinade over the beef and broccoli, stirring to combine. Cook for 2-3 minutes allowing the sauce to thicken and coat the ingredients.

Serve

  • Remove from heat and plate the Beef and Broccoli. Garnish with toasted sesame seeds and sliced scallions. Serve over cauliflower rice or white rice if desired.

Notes

  • Marinate the beef for at least 15 minutes to ensure maximum flavor and tenderness.
  • Do not overcook the beef; stir-fry quickly over high heat to keep it tender.
  • Blanching broccoli keeps it vibrant and crunchy—don't skip this step.
  • Substitute sirloin or skirt steak for a more budget-friendly option.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
