- 4 cups all-purpose flour sifted
- 1 cup cake flour sifted
- 2 teaspoons instant yeast
- 1 teaspoon salt
- 4 tablespoons white sugar
- 2 cups milk lukewarm
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup vegetable oil
- Orange zest from one orange
- 1 cup mixed berry jam
- 1/4 cup butter for brushing between buns and baking pan
- Powdered sugar optional, for dusting
Prepare the Dough
In a large mixing bowl, combine the sifted all-purpose flour, cake flour, instant yeast, salt, and sugar. Whisk these dry ingredients together until well combined.
Mix the Wet Ingredients
In a separate bowl, whisk together the lukewarm milk, eggs, vanilla extract, and vegetable oil. Ensure the mixture is well blended.
Combine Ingredients and Knead
Pour the wet ingredients into the dry ingredients. Mix until a shaggy dough forms. If using a stand mixer, knead with the dough hook for about 5-7 minutes until the dough is smooth and elastic. If kneading by hand, turn the dough out onto a floured surface and knead for approximately 10 minutes.
First Rise
Place the dough in a lightly greased bowl, cover with plastic wrap or a damp cloth, and let it rise in a warm place until it doubles in size, about 1 to 1.5 hours.
Shape the Buns
Once the dough has risen, punch it down to release air. Turn it out onto a floured surface and roll it into a rectangle about 1/2 inch thick. Spread the mixed berry jam evenly over the dough.
Starting from one long side, roll the dough tightly into a log. Cut the log into 12 equal pieces. Place the buns cut side up in a greased baking pan, ensuring they are slightly spaced apart.
- Substitute half of the all-purpose flour with whole wheat flour for added fiber and a healthier twist.
- Store cooled buns in an airtight container at room temperature for up to 3 days or freeze for up to a month.
- Use high-quality or homemade berry jam for the best flavor impact.
- Prepare the dough a day ahead and refrigerate after shaping to save time on baking day.
