Ingredients
  

  • 2 cups fresh broccoli florets

  • 1/4 cup red onion finely chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon lemon juice

Step 1: Prep the Broccoli

  • Start by washing the broccoli thoroughly. Cut the broccoli into bite-sized florets, making sure they are fairly uniform in size for even texture. Pat them dry with a kitchen towel or use a salad spinner to remove excess moisture.

Step 2: Dice the Apple

  • Core and dice your apple into small cubes. There’s no need to peel it unless you prefer to. The skin adds color, texture, and nutrients. To keep the apple from browning before mixing, toss it with a little lemon juice if desired.

Step 3: Chop the Red Onion

  • Finely chop the red onion to prevent any overpowering bites. If you want a milder onion flavor, soak the chopped onion in cold water for 10 minutes, then drain well.

Step 4: Make the Dressing

  • In a small bowl, whisk together the plain Greek yogurt, honey, lemon juice, salt, and pepper until smooth. The yogurt and honey balance the tartness of the lemon juice, creating a creamy yet tangy dressing.

Step 5: Combine the Salad

  • In a large mixing bowl, combine the broccoli florets, diced apple, chopped red onion, sunflower seeds, and dried cranberries. Pour the dressing over the salad and toss gently until everything is evenly coated.

Step 6: Chill and Serve

  • For best flavor, refrigerate the salad for at least 30 minutes before serving. This allows the dressing to meld with the ingredients and the flavors to develop. Serve chilled or at room temperature.
