Ingredients
  

For the Cookie Dough Ice Cream:

  • 5 large egg yolks
  • 3/4 cup granulated sugar
  • 3 cups whole milk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon flaky sea salt
  • 1/3 cup mini semi-sweet chocolate chips

For the Oatmeal Cookie Dough:

  • 1/2 cup salted butter (1 stick)
  • 1/3 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 pasteurized egg
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups old-fashioned oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup canola oil or melted coconut oil
  • 1 large egg
  • 1 cup semi-sweet chocolate chips

Instructions
 

Make the Cookie Dough Ice Cream

  • In a medium saucepan, whisk together the egg yolks and granulated sugar until smooth.
  • Gradually add in the whole milk while whisking continuously.
  • Place the saucepan over medium heat and cook, stirring frequently, until the mixture thickens slightly, about 10 minutes.
  • Remove from heat and stir in the vanilla extract and flaky sea salt.
  • Allow to cool completely.
  • Once cooled, churn in an ice cream maker according to the manufacturer’s instructions.
  • Fold in mini semi-sweet chocolate chips before transferring to a container and freezing until firm.

Prepare the Oatmeal Cookie Dough

  • In a large mixing bowl, cream together the salted butter, light brown sugar, and granulated sugar until light and fluffy.
  • Beat in the pasteurized egg and vanilla extract until well combined.
  • In another bowl, whisk together the flour, old-fashioned oats, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in semi-sweet chocolate chips.

Bake the Cookies

  • Preheat your oven to 350°F (175°C).
  • Line your baking sheets with parchment paper.
  • Drop heaping tablespoons of cookie dough onto the prepared sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are golden and the centers look slightly underbaked.
  • Remove from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Assemble the Ice Cream Sandwiches

  • Once the cookies are completely cool and the ice cream is firm, place a generous scoop of cookie dough ice cream on the bottom of one cookie, then top with another cookie, gently pressing down.
  • Repeat with the remaining cookies and ice cream.
  • For a fun twist, roll the edges of the ice cream sandwiches in extra chocolate chips or sprinkles!

Freeze and Enjoy

  • Place the assembled ice cream sandwiches back in the freezer for about 30 minutes to firm up.
  • When ready to enjoy, take them out, let them sit for a minute to soften slightly, and then dig in!
