  • 1 pound ground chicken (lean)
  • 1 large egg
  • ¼ cup dried breadcrumbs or sub with gluten-free breadcrumbs or ⅓ cup almond flour
  • 1 medium carrot, finely grated
  • ¼ cup sliced green onion
  • 2 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 6 tablespoons buffalo wing sauce divided

Instructions
 

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: In a large mixing bowl, combine the ground chicken, egg, breadcrumbs (or almond flour), grated carrot, sliced green onion, minced garlic, smoked paprika, onion powder, salt, and black pepper. Mix everything together until well combined.
  • Step 3: Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
  • Step 4: Drizzle half of the buffalo sauce (about 3 tablespoons) over the meatballs, making sure they are well coated.
  • Step 5: Bake the meatballs in the preheated oven for 20-25 minutes or until cooked through and reaching an internal temperature of 165°F (75°C).
  • Step 6: Remove the meatballs from the oven and drizzle the remaining buffalo sauce over them. Toss gently to coat.
  • Step 7: Serve hot with your favorite dipping sauce, such as ranch or blue cheese.

Notes

Don’t overmix the ingredients to keep the meatballs tender. You can make them ahead of time and store them in the fridge before cooking.
