Ingredients
  

  • 2 cloves garlic minced
  • 1 teaspoon anchovy paste optional
  • 1 teaspoon pepper freshly cracked
  • 2 teaspoons capers brined
  • 2 tablespoons lemon juice from one lemon
  • 2 teaspoons Dijon mustard
  • 1 cup mayonnaise
  • 0.5 cup Parmesan cheese grated
  • 0.5 cup olive oil extra virgin, good quality
  • 1 teaspoon salt or to taste

Instructions
 

  • Start by finely mincing the garlic cloves. This will allow their flavor to infuse into the dressing beautifully.
  • In a mixing bowl, combine the minced garlic, anchovy paste (if using), freshly cracked pepper, brined capers, lemon juice, and Dijon mustard. Stir these ingredients together until well mixed.
  • Add the mayonnaise to the bowl. This will form the creamy base of your dressing. Mix until the mayonnaise is fully incorporated with the other ingredients.
  • Add the grated Parmesan cheese to the mixture. Stir well to ensure an even distribution of cheese throughout the dressing.
  • Slowly drizzle in the extra virgin olive oil while whisking continuously. This will emulsify the dressing, making it creamy and smooth.
  • Finally, add salt to taste. Start with 1 teaspoon and adjust according to your preference. Give the dressing one last stir to combine all the flavors.

Notes

  • Store the dressing in an airtight container in the fridge for up to one week.
  • For a lighter version, substitute mayonnaise with Greek yogurt.
  • Adjust garlic and lemon juice quantities to suit your taste preferences.
