Ingredients
  

  • 2 lbs boneless, skinless chicken breasts
  • 2 bell peppers 1 red, 1 green
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic pressed
  • 1/4 cup green onion chopped

Instructions
 

  • Begin by cutting the chicken breasts into bite-sized pieces. This will allow them to cook quickly and evenly.
  • In a large bowl, toss the chicken pieces with the Cajun seasoning. Make sure every piece is well-coated for maximum flavor.
  • Heat the olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken to the skillet.
  • Cook the chicken for about 5-7 minutes, stirring occasionally, until it’s browned and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
  • While the chicken is cooking, slice the bell peppers into strips. Once the chicken is done, push it to one side of the skillet and add the bell peppers and pressed garlic to the other side.
  • Sauté the bell peppers and garlic for about 3-4 minutes until they are tender but still slightly crisp. Mix everything together in the skillet.
  • Remove the skillet from heat and sprinkle chopped green onions on top for a fresh finish. Serve immediately and enjoy your Cajun Chicken Skillet!
