Ingredients
  

  • 1.5 lb baby potatoes whole
  • 3 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt

Instructions
 

  • Start by preheating your oven to 400°F (200°C). This ensures your potatoes will roast to perfection.
  • Rinse the baby potatoes under cold water to remove any dirt. Pat them dry with a clean towel.
  • In a large mixing bowl, combine the washed baby potatoes with the olive oil, Cajun seasoning, and salt. Toss everything together until the potatoes are well-coated.
  • Spread the seasoned potatoes in a single layer on a baking sheet. This helps them roast evenly without steaming.
  • Place the baking sheet in the preheated oven and roast the potatoes for about 25-30 minutes. Halfway through, give them a stir to ensure they brown evenly.
  • After 30 minutes, poke a potato with a fork to check if it’s tender inside. If not, give them an additional 5-10 minutes.
  • Once the potatoes are golden brown and crispy, remove them from the oven. Let them cool for a few minutes, then serve hot as a delightful side dish or snack.

Notes

  • Store cooked Cajun Potatoes in an airtight container in the refrigerator for up to 4 days.
  • Reheat by baking at 350°F (175°C) for 10-15 minutes until crispy.
  • Try avocado oil instead of olive oil for a different flavor.
  • Add fresh herbs like parsley or cilantro for extra freshness.
  • For more spice, add cayenne pepper to the Cajun seasoning.
