- 2 cups broccoli florets
- 2 cups cooked chicken shredded
- 2 cups shredded cheddar cheese
- 1 cup cream cheese
- 1 cup chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs optional
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, about 9-11 minutes. In the last 3 minutes of cooking, toss in the broccoli florets to blanch them slightly. Drain the pasta and broccoli well and set aside.
In a large mixing bowl, combine the cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until the cream cheese is smooth and fully incorporated. Add in the shredded cheddar cheese and cooked chicken, mixing until everything is evenly coated in the cheesy sauce.
Gently fold the drained pasta and broccoli into the cheese and chicken mixture. Make sure the broccoli is evenly distributed and the pasta is coated with the sauce.
Pour the entire mixture into a greased 9x13-inch baking dish. Sprinkle the grated Parmesan cheese evenly over the top. If you want extra crunch, sprinkle the optional breadcrumbs on top as well.
Preheat your oven to 375°F (190°C). Bake the casserole uncovered for 20-25 minutes, or until the top is golden brown and the sauce is bubbling around the edges.
