- 1 small onion diced small
- 2 tsp olive oil
- 1 tbsp minced garlic
- 15 oz Rao's Alfredo Sauce jar
- 0.5 tsp poultry seasoning
- 0.5 tsp ground thyme
- 1 tsp Spike Seasoning
- 0.25 tsp black pepper or more, to taste
- 0.5 cup sour cream
- 6 cups cooked, diced chicken breast
- 6 cups broccoli florets or a little more
- 1.5 cups grated Swiss cheese
- 0.5 cup grated Parmesan cheese
Dice the small onion finely and mince the garlic. Chop the cooked chicken breasts into bite-sized pieces. Wash and trim the broccoli into florets, then steam until tender-crisp.
Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
In a large mixing bowl, combine the jar of Alfredo sauce with poultry seasoning, ground thyme, Spike seasoning, black pepper, and sour cream. Stir well to blend all the flavors. Fold in the sautéed onions and garlic.
Preheat the oven to 350°F (175°C). In a 9x13-inch casserole dish, layer the cooked chicken and steamed broccoli evenly. Pour the Alfredo mixture over the top, coating everything thoroughly. Sprinkle the grated Swiss cheese and Parmesan cheese evenly on top.
Bake the casserole for 25-30 minutes, or until the cheese is melted, bubbly, and lightly golden. Let it cool for a few minutes before serving.
Scoop generous portions onto plates and enjoy. Serve with a green salad or garlic bread if desired.
- This casserole freezes well if assembled but not baked; bake from frozen at 350°F for 50-60 minutes before serving.
- For best melting and texture, shred your own Swiss and Parmesan cheeses rather than using pre-shredded.
- Steaming broccoli until just tender-crisp prevents a watery or overly firm casserole.
- Substitute turkey breast, tofu, or different veggies like cauliflower for variation.
- To add heat, sprinkle crushed red pepper flakes into the sauce or top with sliced jalapeños before baking.
