Chicken Chow Mein

Ingredients
  

  • 12 oz chow mein stir-fry noodles (see note)
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1/2 cup water
  • 1 pound chicken tenderloins or chicken breasts thinly sliced into bite-sized pieces
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • 1 tablespoon + 1/4 cup vegetable oil divided
  • 3 cups thinly sliced green cabbage from 1 small cabbage (8 oz)
  • 2 stalks celery very thinly sliced
  • 2 cups shredded carrots
  • 2 cloves garlic minced

Instructions
 

Prepare the Noodles

  • Start by cooking the chow mein noodles according to the package instructions. Usually, this involves boiling them in water until they are tender. Once cooked, drain and set aside.

Marinate the Chicken

  • In a bowl, combine the chicken pieces with cornstarch, salt, and a tablespoon of vegetable oil. This will help to tenderize the chicken and give it a nice coating. Let it marinate for about 10 minutes.

Cook the Chicken and Vegetables

  • In a wok or large skillet, heat the remaining vegetable oil over medium-high heat. Ensure the oil is hot enough before adding the chicken.
  • Add the marinated chicken to the hot oil. Stir-fry for about 5-7 minutes or until the chicken is cooked through and has a nice golden color. Remove the chicken from the pan and set aside.
  • In the same pan, add a little more vegetable oil if needed. Add the minced garlic, sliced celery, shredded carrots, and cabbage. Stir-fry for about 3-4 minutes until the vegetables are tender yet still crisp.

Combine and Finish

  • Return the cooked chicken to the pan with the vegetables. Add the cooked chow mein noodles. Pour in the soy sauce, oyster sauce, sesame oil, and water. Toss everything together until well combined and heated through, about 2-3 minutes.
  • Finally, add the scallions, giving everything one last toss. Cook for an additional minute, allowing the scallions to soften slightly.

Serve

  • Remove the Chicken Chow Mein from heat. Serve hot in bowls, and enjoy this delicious meal with your family or friends!

Notes

  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to one month.
  • Substitute chicken with shrimp, tofu, beef, or pork based on preference.
  • Feel free to swap chow mein noodles with spaghetti or other noodles.
  • Add bell peppers, snap peas, broccoli, or bean sprouts for extra veggies.
  • Avoid overcooking vegetables to keep them crisp and vibrant.
