Chicken Flautas Recipe

Ingredients
  

  • 1/2 cup salsa medium or hot for more of a kick
  • 1/2 cup sour cream
  • 1 can mild chopped green chiles 4 oz.
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 3 cups shredded cooked chicken rotisserie chicken preferred
  • 1 cup freshly shredded Monterrey Jack cheese
  • 1 cup freshly shredded sharp cheddar cheese
  • cayenne pepper or hot sauce to taste
  • 12-14 medium flour tortillas 7-8 inch
  • vegetable oil optional for frying

Instructions
 

Preparation

  • If baking, preheat your oven to 400°F (200°C). If frying, heat about 1 inch of vegetable oil in a frying pan over medium heat.

Mix the Filling

  • In a large mixing bowl, combine shredded chicken, Monterrey Jack cheese, sharp cheddar cheese, salsa, sour cream, chopped green chiles, chili powder, ground cumin, garlic powder, onion powder, smoked paprika, dried oregano, and salt. Mix until well combined. Add cayenne pepper or hot sauce to taste.

Assemble the Flautas

  • Spoon about 2-3 tablespoons of the chicken filling onto one end of a flour tortilla. Roll it tightly to secure the filling inside. Repeat with remaining tortillas and filling.

Cook the Flautas

  • If baking, place the flautas seam-side down on a baking sheet, lightly spray or brush with oil, and bake for 20-25 minutes until golden and crispy.
  • If frying, carefully place rolled flautas seam-side down in hot oil and fry for 2-3 minutes per side until golden brown. Drain on paper towels.

Serve

  • Serve warm with extra salsa, sour cream, or guacamole on the side. Enjoy!

  • Using rotisserie chicken saves time and adds great flavor.
  • Try different cheeses like pepper jack for extra kick.
  • Baking is a healthier alternative to frying.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
