  • 2 tablespoons Butter
  • ½ cup Panko Breadcrumbs
  • 1 tablespoon Olive Oil not extra virgin
  • 1 pound Chicken Breast cut into 1-inch cubes
  • Salt and Pepper to taste
  • 1 teaspoon Italian Seasoning
  • ½ large Yellow Onion diced
  • 3 cloves Garlic minced
  • 5 cups Chicken Stock
  • 1 pound Pasta
  • 24 ounces Marinara Sauce
  • 1 cup Shredded Mozzarella Cheese divided
  • ½ cup Shredded Parmesan Cheese
  • Fresh Basil for garnish

Instructions
 

  • Step 1: Heat the olive oil and butter in a large skillet over medium-high heat. Add the cubed chicken, season with salt, pepper, and Italian seasoning, and cook for about 5-7 minutes until golden brown and cooked through. Remove and set aside.
  • Step 2: In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
  • Step 3: In a large pot, bring 5 cups of chicken stock to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.
  • Step 4: Return the chicken to the skillet with onions and garlic. Pour in marinara sauce and stir. Add cooked pasta and toss until combined, adding reserved pasta water if needed.
  • Step 5: Preheat oven to 375°F (190°C). Stir in half of the mozzarella and all of the Parmesan cheese into the pasta mixture. Sprinkle remaining mozzarella and panko breadcrumbs on top.
  • Step 6: Transfer the skillet to the oven and bake for about 20 minutes until cheese is bubbly and golden brown.
  • Step 7: Let cool for a few minutes, garnish with fresh basil, and serve hot.

Notes

For extra flavor, marinate the chicken in Italian dressing for an hour before cooking. Feel free to use whole wheat or gluten-free pasta for a healthier option.
