1tablespoonred curry paste
2teaspoonsfish sauce(10 ml)
1teaspoonsalt
0.5teaspoonground turmeric
0.5teaspoongranulated sugar
1tablespoonvegetable oil or avocado oil(15 ml)
Peanut Sauce
1cupcreamy peanut butter
0.5cupcoconut milk
2tablespoonssoy sauce
1tablespoonlime juice
waterto thin the sauce if necessary
Instructions
Step 1: In a medium bowl, combine the diced chicken thighs, red curry paste, fish sauce, salt, ground turmeric, granulated sugar, and vegetable oil. Make sure all the chicken pieces are well-coated in the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.
Step 2: While the chicken is marinating, soak your wooden skewers in water for about 30 minutes to prevent them from burning on the grill.
Step 3: Once the chicken has marinated, thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
Step 4: Preheat your grill or grill pan over medium-high heat. Once hot, place the skewers on the grill and cook for about 5-6 minutes on each side, or until the chicken is cooked through and has nice grill marks.
Step 5: In a small saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, and a little water to thin it out if necessary. Stir well over low heat until it’s heated and smooth.
Step 6: Serve the grilled chicken skewers hot with the peanut sauce on the side for dipping. Garnish with chopped peanuts and fresh cilantro.
Notes
Feel free to use chicken breast for a leaner option. Don’t skip the marinating step; it enhances the flavor. For a smoky flavor, try grilling over charcoal.
