Ingredients
  

Chicken

  • 1.5 pounds chicken breasts (3 breasts, each sliced in half to make 6 thin cutlets)

Seasoning

  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder

Coating

  • 3 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Instructions
 

  • Step 1: Prepare the Chicken. First, take your chicken breasts and place them on a cutting board. Using a sharp knife, slice each breast in half horizontally to create even thin cutlets. Season the chicken cutlets with salt, black pepper, paprika, and garlic powder.
  • Step 2: Dredge the Chicken. Sprinkle the all-purpose flour over the seasoned chicken cutlets, making sure each piece is lightly coated in flour.
  • Step 3: Heat the Pan. In a large skillet, heat the olive oil and butter over medium-high heat until the butter is melted and bubbling.
  • Step 4: Cook the Chicken. Carefully place the chicken cutlets in the hot skillet in a single layer. Cook for about 3-4 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Step 5: Make the Sauce. In the same skillet, reduce the heat to medium and add any additional butter if needed. Add a splash of water or chicken broth to deglaze the pan, scraping up any tasty brown bits.
  • Step 6: Return the Chicken. Once deglazed, return the chicken to the pan and add a little more water or chicken broth if you want a saucier dish. Let it simmer for a few minutes to combine all those wonderful flavors.
  • Step 7: Serve and Enjoy! Serve your Chicken Stroganoff hot over a bed of rice, pasta, or mashed potatoes. Garnish with fresh parsley or a sprinkle more paprika if desired.

Notes

Extra tips: Use thinly sliced chicken breasts for faster cooking. Don’t overcrowd the pan. Feel free to add mushrooms or onions to the sauce for extra flavor.
