  • 1 medium yellow or sweet onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 lb boneless chicken breast chopped into bite-size pieces
  • 2 teaspoons chopped chipotle peppers almost minced, canned in adobo sauce
  • 1 teaspoon granulated sugar
  • 28 oz cans diced tomatoes undrained, fire-roasted variety preferred
  • 1 cup water

Make Chipotle Chicken Soup: A Simple Method

  • Heat the olive oil in your large pot over medium heat. Add the chopped yellow onion and cook until it softens and becomes translucent, about 5 minutes. Stir frequently to avoid browning. Then, add the minced garlic and sauté for another 1-2 minutes until fragrant.
  • Increase the heat to medium-high and add the chopped chicken breast to the pot. Stir frequently, cooking the chicken until it’s no longer pink on the outside, about 5-7 minutes.
  • Stir in the chopped chipotle peppers and granulated sugar. The sugar helps balance the smoky heat and acidity of the tomatoes, adding a subtle sweetness to the soup.
  • Add the canned diced tomatoes with their juices and the cup of water. Fire-roasted tomatoes add a wonderful depth, but regular diced tomatoes work well too.
  • Bring the soup to a gentle simmer, then reduce the heat to low and let it cook uncovered for about 15-20 minutes. This allows the flavors to meld and the chicken to cook through completely. Taste and adjust seasoning if needed. Serve hot with your favorite toppings or a slice of crusty bread.
