Ingredients
  

  • 1 can chickpeas or white beans drained and rinsed
  • 2 tbsp cocoa powder
  • 2 tbsp Dutch cocoa or additional regular cocoa powder
  • 1/3 cup flour white, oat, spelt, almond, or sorghum
  • 3 tbsp milk of choice or applesauce
  • 3 tbsp oil or nut butter of choice
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup sugar
  • 1/2 cup chocolate chips not optional; omit at own risk

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures your brownies bake evenly and rise beautifully.
  • In your food processor, combine the drained chickpeas (or white beans), cocoa powder, flour, milk (or applesauce), oil (or nut butter), vanilla extract, baking powder, salt, and baking soda. Blend until the mixture is completely smooth and creamy. This will be the base of your brownies.
  • Add the sugar to the blended mixture and pulse until fully incorporated. This will help to balance the flavor and add that delightful sweetness we all crave in brownies.
  • Transfer the batter to a mixing bowl and fold in the chocolate chips using a rubber spatula. Make sure they’re evenly distributed throughout the batter—this is what makes each bite heavenly!
  • Grease your 8x8 baking dish or line it with parchment paper for easier removal later. Pour the brownie batter into the dish, smoothing it out evenly.
  • Place the baking dish in the preheated oven and bake for 25-30 minutes. You’ll know they’re done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Once baked, allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and enjoy!

Notes

  • For an extra indulgent treat, top your brownies with a scoop of vanilla ice cream.
  • Experiment with different mix-ins, such as chopped nuts or dried fruits, to add texture.
