Ingredients
  

Crust Ingredients

  • 18 sheets Graham crackers Crushed for the crust.
  • 6 tablespoons Unsalted butter Melted.
  • 3 tablespoons Granulated sugar For the crust.

Filling Ingredients

  • 16 ounces Cream cheese At room temperature.
  • 1 cup Granulated sugar For the filling.
  • 2 large Eggs To bind the mixture.
  • 1 teaspoon Vanilla extract For flavor.
  • 1 cup Chocolate chips Semi-sweet or dark.

Ganache Ingredients

  • 1 cup Heavy cream For the ganache.
  • 8 ounces Semisweet chocolate Chopped for the ganache.

Instructions
 

  • Step 1: Preheat your oven to 325°F (160°C). Crush the graham crackers into fine crumbs and mix with melted butter and sugar. Press into the bottom of a 9-inch springform pan.
  • Step 2: In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla extract. Fold in chocolate chips.
  • Step 3: Pour the cheesecake filling over the crust and bake for 50-60 minutes. Let it cool in the oven for an hour, then refrigerate for at least 4 hours.
  • Step 4: For the ganache, heat heavy cream until simmering, then pour over chopped chocolate. Stir until smooth and let cool slightly.
  • Step 5: Once the cheesecake is chilled, pour the ganache over the top and serve. Optionally garnish with extra chocolate chips or whipped cream.

Notes

Let the cheesecake cool completely before adding ganache to prevent melting. Use a hot knife for cleaner slices.
