  • Spoon or cookie scoop

  • Spatula

Ingredients

Waffle Batter

  • 1 1/4 cups warm milk
  • 2 tablespoons active dry yeast
  • 1 tablespoon granulated sugar
  • 6 tablespoons butter softened or lightly melted
  • 1 egg
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt

Cookie Dough

  • 1 1/2 cups butter softened (3/4 cup for the dough and 3/4 cup for the filling)
  • 2/3 cup brown sugar
  • 2 tablespoons heavy cream
  • 1 1/2 teaspoons vanilla extract
  • 1 cup flour for the cookie dough
  • 1/4 teaspoon salt for the cookie dough
  • 1/2 - 3/4 cup mini chocolate chips

Assembly Ingredients

  • 6-12 waffles depending on size
  • 6-12 scoops chocolate ice cream
  • Warm hot fudge optional

Instructions

Prepare the Waffle Batter

  • In a small bowl, combine the warm milk, active dry yeast, and granulated sugar. Let it sit for about 5-10 minutes until it becomes frothy.
  • In a large mixing bowl, whisk together the softened butter, egg, and the frothy yeast mixture. Gradually add the all-purpose flour and salt, stirring until a smooth batter forms.

Cook the Waffles

  • Preheat your waffle maker according to the manufacturer's instructions.
  • Pour an appropriate amount of batter into the waffle maker and cook until golden brown and crispy. Repeat until you've made 6-12 waffles, depending on size.

Make the Cookie Dough

  • In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the heavy cream and vanilla extract, mixing until well combined.
  • Gradually add the flour and salt, stirring until just combined. Fold in the mini chocolate chips.

Assemble the Sandwiches

  • Once your waffles have cooled slightly, take one waffle and spread a generous layer of cookie dough on top.
  • Add a scoop of chocolate ice cream, then place another waffle on top, creating a sandwich. Repeat for remaining waffles and filling.

Serve and Enjoy

  • For an extra touch, drizzle warm hot fudge over the assembled sandwiches just before serving. Enjoy the delicious combination of flavors and textures!

Notes

  • Allow the yeast mixture to become frothy to ensure proper rise in your waffle batter.
  • Use room temperature ingredients for the cookie dough to achieve the best texture and flavor.
  • Let waffles cool slightly before assembling to prevent the ice cream from melting too quickly.
  • Store leftover sandwiches wrapped tightly in plastic wrap and freeze for up to one week.
  • Reheat frozen sandwiches in a toaster or toaster oven to restore crispiness.
