- 1 cup creamy peanut butter
- 1/2 cup honey
- 2 tablespoons Dutch process cocoa powder
- 1/8 teaspoon salt
- 5 tablespoons chocolate protein powder
- 1-1/2 cups old-fashioned oats
- 1 teaspoon vanilla extract
In a large mixing bowl, combine the creamy peanut butter, honey, and vanilla extract. Use a rubber spatula to mix until smooth and creamy.
To the wet mixture, add the Dutch process cocoa powder, chocolate protein powder, and salt. Stir until well combined.
Gradually fold in the old-fashioned oats and coarsely chopped dark chocolate chips. Mix until everything is evenly distributed.
Using your hands, scoop out tablespoon-sized portions of the mixture and roll them into balls. Place each ball on a baking sheet or plate lined with parchment paper.
Once all the mixture is rolled into bites, place the tray in the refrigerator for at least 30 minutes. This will help them firm up and hold their shape.
