Ingredients
  

  • 1/3 cup dark chocolate chips coarsely chopped
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 2 tablespoons Dutch process cocoa powder
  • 1/8 teaspoon salt
  • 5 tablespoons chocolate protein powder
  • 1-1/2 cups old-fashioned oats
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large mixing bowl, combine the creamy peanut butter, honey, and vanilla extract. Use a rubber spatula to mix until smooth and creamy.
  • To the wet mixture, add the Dutch process cocoa powder, chocolate protein powder, and salt. Stir until well combined.
  • Gradually fold in the old-fashioned oats and coarsely chopped dark chocolate chips. Mix until everything is evenly distributed.
  • Using your hands, scoop out tablespoon-sized portions of the mixture and roll them into balls. Place each ball on a baking sheet or plate lined with parchment paper.
  • Once all the mixture is rolled into bites, place the tray in the refrigerator for at least 30 minutes. This will help them firm up and hold their shape.
  • After chilling, your Chocolate Energy Bites are ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to a week.

Notes

  • If the mixture is too crumbly, add more peanut butter or honey to improve consistency.
  • For a nut-free version, substitute peanut butter with sunflower seed butter or tahini.
  • These bites keep well refrigerated for up to one week and can be frozen for up to three months.
