Ingredients
  

  • 1 cup unsalted butter 113 grams, or 1 stick
  • 1 ounce unsweetened chocolate 28 grams
  • 16 ounces powdered sugar 454 grams, or 1 pound
  • 2 teaspoons pure vanilla extract 2 grams
  • 1/4 cup milk 57 grams, plus extra to thin the frosting as needed
  • 1/4 teaspoon kosher salt

Chocolate Fudge Frosting: How It’s Done

  • Start by chopping the unsweetened chocolate into small pieces and placing it in a microwave-safe bowl. Microwave in short bursts of 15 seconds, stirring in between until smooth and completely melted. Set aside to cool slightly.
  • In a mixing bowl, add the unsalted butter. Using a stand mixer or hand mixer, beat the butter on medium speed until it becomes light and fluffy, about 2-3 minutes.
  • Pour the melted chocolate into the creamed butter. Beat on low speed until combined, ensuring the chocolate is evenly distributed throughout the butter.
  • Gradually add the powdered sugar, mixing on low speed to prevent a cloud of sugar from escaping. Once combined, increase the mixer speed to medium and beat until smooth.
  • Pour in the milk and vanilla extract. Continue to mix on medium speed until the frosting is creamy and spreadable. If the frosting is too thick, add a tablespoon of milk at a time until you reach your desired consistency.
  • Finally, add the kosher salt and mix for another 30 seconds. Taste the frosting and adjust the sweetness or saltiness to your liking.

Notes

  • Store frosting at room temperature for up to one day, or refrigerate in an airtight container for up to one week.
  • Freeze in a sealed container for up to three months; thaw overnight in the refrigerator before using.
  • Customize your frosting by adding peppermint extract, espresso powder, peanut butter, or spices for unique flavors.
