Ingredients
  

  • 2 Tbsp coconut oil or extra virgin olive oil Adds richness and a hint of flavor
  • 1 cup long grain rice (jasmine or basmati) rinsed and well drained
  • 1 clove garlic minced
  • 1 3/4 cups filtered water for cooking the rice
  • 1/2 tsp fine sea salt Enhances the flavors
  • 1 lime zest Zest of 1 lime
  • 1 Tbsp lime juice plus more to taste
  • 1/2 cup cilantro finely chopped (1 bunch, loosely packed)

Instructions
 

  • In a medium saucepan, heat the coconut oil or extra virgin olive oil over medium heat until melted and shimmering.
  • Add the minced garlic to the pan and sauté for about 30 seconds, or until fragrant. Be careful not to let it brown, as burnt garlic can impart a bitter taste.
  • Stir in the rinsed rice, ensuring each grain gets coated in the oil and garlic mixture. Cook for an additional 1-2 minutes, stirring frequently.
  • Pour in the filtered water and add the fine sea salt. Increase the heat to high and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the water is absorbed. Avoid lifting the lid during cooking, as this can disrupt the steaming process.
  • Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes. Then, uncover and fluff with a fork. Stir in the lime zest, lime juice, and chopped cilantro until well combined. Taste and adjust seasoning with additional lime juice or salt if desired.
  • Serve the cilantro lime rice warm as a side dish or a base for your favorite protein. Enjoy the vibrant flavors!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze cooked rice for up to 3 months; thaw overnight in the refrigerator before reheating.
  • Reheat with a splash of water to keep rice moist and fluffy.
  • Substitute cilantro with parsley if desired, though flavor will differ.
