Cinnamon Muffins: How It’s Done

  • Begin by preheating your oven to 350°F (175°C). This ensures that your muffins bake evenly and rise beautifully.
  • Grease your muffin tin with butter or line it with muffin liners to prevent sticking. This step is crucial for easy removal after baking.
  • In a large mixing bowl, whisk together the 2 cups of all-purpose flour, 6 tablespoons of granulated sugar, 0.5 teaspoon of salt, 1 tablespoon of baking powder, and 1 teaspoon of ground cinnamon until well combined.
  • In another bowl, beat the 2 large eggs and add in the 0.25 cup of melted butter and 1 cup of whole milk. Whisk until the mixture is smooth and well blended.
  • Pour the wet ingredients into the bowl with the dry ingredients. Gently fold them together using a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  • Scoop the batter into each muffin cup, filling each about 2/3 full. This allows room for the muffins to rise without overflowing.
  • In a small bowl, mix together the 0.5 cup of granulated sugar and 1 tablespoon of ground cinnamon. Sprinkle this mixture generously over the muffin batter in each cup.
  • Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. The tops should be golden brown and fragrant.
  • Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
