Ingredients
  

Cheese Filling

  • ½ cup cream cheese softened
  • ½ cup feta cheese crumbled
  • ¼ cup parmesan cheese grated
  • 1 large egg

Spinach Filling

  • 2 cups fresh chopped spinach
  • 1 tablespoon chopped dill
  • 2 cloves garlic minced
  • ¼ teaspoon ground black pepper

Instructions
 

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: In a large skillet over medium heat, add a bit of oil and toss in the fresh chopped spinach. Sauté until it wilts down, then remove from heat and let cool.
  • Step 3: In a mixing bowl, combine the softened cream cheese, crumbled feta cheese, grated parmesan cheese, and the large egg. Mix until smooth.
  • Step 4: Add the sautéed spinach, chopped dill, minced garlic, and ground black pepper to the cheese mixture. Stir until well combined.
  • Step 5: Roll out the puff pastry on a floured surface and cut into 3-inch squares.
  • Step 6: Place a spoonful of the spinach and cheese mixture in the center of each square. Fold the corners over to seal.
  • Step 7: Arrange on a baking sheet lined with parchment paper. Brush the tops with beaten egg and bake for 20-25 minutes until golden brown.
  • Step 8: Let them cool on a wire rack for a few minutes before serving.

Notes

For extra flavor, consider adding spices like nutmeg or crushed red pepper. You can also freeze the assembled puffs before baking.
