Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.
Cream together the unsalted butter and light brown sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
Add the vanilla extract and mix until combined.
In another bowl, whisk together the old-fashioned oats, baking soda, salt, and all-purpose flour.
Gradually add the dry mixture to the butter and sugar mixture, stirring until just combined.
Fold in the cookie butter and chocolate chips until evenly distributed.
Pour the mixture into the prepared baking pan and spread evenly with a spatula.
Bake for 25-30 minutes, or until edges are golden brown and center is set.
Remove from oven and cool in the pan for about 10 minutes. Lift bars out using parchment paper and cool completely on a wire rack before cutting and serving.
