Instructions
 

Base Preparation

  • In a large mixing bowl, combine the organic corn flakes and brown rice krispies. Stir until well combined.
  • In a separate bowl, mix 2/3 cup creamy peanut butter, 1/3 cup honey, and 1/3 cup maple syrup until smooth. Pour over the cereal mixture and fold gently until evenly coated.
  • Transfer the mixture into a greased 9x13-inch baking pan. Press down firmly and evenly with a spatula or hands to form the base layer.

Cookie Dough Layer

  • In another mixing bowl, combine 2 cups oat flour, 1/2 cup cashew butter, 1/4 cup honey, 3 tablespoons salted butter (room temperature), 1 tablespoon vanilla extract, and 1/3 cup mini chocolate chips. Mix until soft cookie dough consistency forms.
  • Spread the cookie dough mixture evenly over the peanut butter base. Press down gently to ensure it sticks well.

Chocolate Topping and Finishing

  • Melt 12 ounces chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  • Pour the melted chocolate over the cookie dough layer and spread evenly.
  • If desired, sprinkle sea salt over the melted chocolate for extra flavor.
  • Cover the pan with plastic wrap and refrigerate for at least 2 hours or until the chocolate has set completely.
  • Remove the bars from the pan and cut them into squares. Serve chilled or at room temperature and enjoy!
